The dough bench

Three tools cover almost everything that happens between flour and oven. None of them is complicated, and each one replaces a worse habit.

The bench scraper

It divides dough, lifts it off the counter without stretching it, and scrapes the counter clean afterwards. That is the whole job, and it does all three better than the knife most people reach for. The scale printed along the blade turns it into a rough ruler, so a length of dough can be portioned by eye into equal pieces rather than by guess. Unlike a knife it does not blunt and it does not score the worktop.

The dough blender

Blades that cut cold butter into flour without your hands warming it. Warm butter is the enemy of a flaky biscuit: it smears instead of staying in flakes, and the layers close. A blender keeps the butter in pea-sized pieces and your palms out of the bowl. Two minutes of work replaces ten of fingertip rubbing.

The flour duster

A perforated shaker rather than a handful. The point is thin, even coverage: too much flour on a bench dries the dough and toughens it, and a handful is always too much. A duster puts down the film you actually want and keeps the bag out of the working area.
